Where most kadhi across South Asia is built on a yogurt base, the Sindhi version skips dairy entirely — its sourness comes from tamarind and a thick roux of chickpea flour instead.

Gram flour is toasted in oil until fragrant, then simmered into a tangy, tamarind-soured gravy loaded with seasonal vegetables like okra, drumstick, and potato. Sindhi eateries ladle it hot over rice, and it's a fixture at community gatherings and weekend lunches.

Why it's made this way: Its vegetable-and-gram-flour base reflects Sindh's farming economy, and the dairy-free, tamarind-soured style is what distinguishes it from the yogurt-based kadhi eaten elsewhere in Pakistan and India.
