Traditional bakers knead grated coconut meat directly into the dough along with coconut milk, so the bread needs no added fat.

A soft, slightly sweet bread enriched with coconut milk and shredded coconut, baked in small round loaves. It's sold warm from home bakeries and market stalls across the Bocas islands, often alongside coffee.

Why it's made this way: Coconut palms line Bocas del Toro's Caribbean shoreline, and the bread carries the same West Indian baking tradition that shaped the region's Afro-Caribbean food culture.
