This cheese is pressed and sold within a day of being made, since it has no aging or preservatives and starts to sour quickly in the heat.
A mild, salty fresh cheese made from cow's milk, pressed into blocks and often lightly fried on a griddle until golden. Vendors sell it from coolers along Herrera's highways, cut to order.
Why it's made this way: Herrera's ranching plains support a strong dairy tradition, and this unaged white cheese is one of the province's most recognizable roadside products.
