These tamales are made only during the fresh corn harvest, using young, milky kernels ground straight from the cob rather than dried, aged corn.

Freshly harvested corn is ground into a soft, slightly sweet dough, sometimes layered with seasoned pork, then wrapped in corn husks or leaves and boiled. Roadside cooks in Herrera sell them seasonally at harvest time.

Why it's made this way: Herrera's countryside around Ocú and Pesé is one of Panama's key corn-growing areas, and this tamale marks the fresh-corn harvest that shapes the province's rural food calendar.
