Sao is traditionally pickled in vinegar with pig's ears and feet for days before serving, a preservation trick that predates refrigeration on the Azuero peninsula.

Pork, often ears, feet, and tongue, is boiled tender, sliced thin, and marinated in a vinegar-onion-chile pickle. It's served cold as a tangy snack at Azuero festivals and roadside stands.

Why it's made this way: Sao is closely tied to Los Santos province's cattle-and-pork ranching culture and its famous folkloric festivals, where it's a staple food alongside music and dance.
