No stove is involved — the fish "cooks" entirely from sitting in lime juice until it turns opaque and firm.

Kokoda is a raw fish salad popular among Motu-Koitabu and other coastal Papuan communities around Port Moresby: cubes of fresh fish are marinated in lime juice, then mixed with coconut milk, chilli, onion and tomato, often served at weddings and celebrations.

Why it's made this way: Coastal communities around Port Moresby have long relied on the day's fresh catch, and marinating rather than cooking it over fire made for a dish suited to the tropical coast, now shared in variations across Melanesia and Fiji.
