Vendors crush the cane through hand-cranked metal presses right on the street, the same simple machines that have squeezed Asunción's sugarcane juice for generations.

Raw sugarcane stalks are fed through a hand-cranked press, and the juice is caught, mixed with lime juice, and served over ice in a cup. Carts set up outside Asunción's markets and along busy avenues, especially in summer heat.

Why it's made this way: The drink's popularity is tied to Asunción's dense street-cart culture, where fresh-pressed mosto has long been the cheapest way to cool down in Paraguay's capital.
