The towns of Hohenau and Obligado in Itapúa were founded directly by German immigrant families, and their bakeries still bake kuchen using recipes barely changed since the 1900s settlement.
A soft yeast-dough base is topped with fruit — usually plum, apple, or guava — and a buttery crumble, baked in large trays and sold by the slice at bakeries throughout Itapúa's German-founded towns. It's a fixture of afternoon coffee breaks.
Why it's made this way: Itapúa's Hohenau and Obligado were settled by German colonists in the early 20th century, and kuchen remains one of the clearest living traces of that heritage.
