Surubí can grow well over a meter long, and fishermen along the Paraná near Encarnación sometimes need two people just to haul a single catch onto the grill.
Thick steaks of surubí, a large river catfish, are salted and grilled whole over coals until the flesh flakes easily, served with lemon at riverside stalls near Encarnación. It's a lighter alternative to Paraguay's usual beef asado.
Why it's made this way: Itapúa's stretch of the Paraná River, especially around the Yacyretá reservoir, is prime surubí fishing territory, tying the dish directly to the department's waterfront towns.
