Huacatay looks and grows like a weed and is actually a type of marigold, not a true mint — yet it's so central to the sauce's flavor that no other herb is considered an acceptable substitute.
Boiled yellow potatoes are blanketed in a thick, golden sauce of ground peanuts, huacatay, garlic and aji amarillo, finished with a slice of hard-boiled egg and a black olive. Market vendors sell it cold as a ready-to-eat plate.
