Muyuchi (Hand-Spun Ice Cream)

It is frozen without electricity: the vendor spins a metal pot of the mix inside a wooden tub of ice and salt until it sets in layers on the walls, and the name comes from a Quechua word for turning around.

A frozen dessert of fresh milk, peanut, sesame and coconut flavoured with vanilla, cinnamon and clove, sold by muyucheras in the Plaza Mayor of Ayacucho and often served with red airampo syrup and anise wafers.

Why it's made this way: It arose in Ayacucho in the early 20th century, when the city had no electricity and ice was brought down by mule from the Rasuwillka snow peak.
