The plate mixes highland and coastal foods: guinea pig, chicken and dried meat from the Andes alongside seaweed and fish roe carried up from the Pacific coast.
A composed cold platter of roast guinea pig, chicken, charqui (dried meat), toasted corn, cochayuyo seaweed, fish roe, cheese and a corn fritter is served together at room temperature. Vendors set up folding tables around Cusco's main square, especially during the Corpus Christi festival.
Why it's made this way: The dish is inseparable from Cusco's Corpus Christi celebration, when it is sold almost exclusively on the streets surrounding the cathedral.
