Choclo con Queso

Choclo con Queso — street food from Cusco, Peru

The corn used, choclo cusqueño, has kernels several times larger than standard sweet corn — a variety adapted specifically to Cusco's high-altitude Sacred Valley soil.

A giant ear of boiled Cusco corn is served with a thick slice of fresh Andean cheese. Vendors sell it hot from steaming carts around the Sacred Valley and Cusco's markets, often with a side of salsa criolla.

Why it's made this way: The oversized choclo variety is grown almost exclusively in the Sacred Valley's altitude and soil, making the snack a genuine regional product.
