Around 85% of the people of Oropesa, 21 km from Cusco, work in bread making, and the ovens are fired up around midnight.

A large, round, disc-shaped wheat loaf baked overnight in artisanal clay ovens and sold from the bakeries of Oropesa to the visitors who stop in town.

Why it's made this way: Oropesa, in Cusco’s Quispicanchi province, is known as the national capital of bread, with some 65 bakeries turning out chutas.
