Cabrito con Frijoles

Cabrito con Frijoles — street food from Lambayeque, Peru

Many Chiclayo cooks add loche, an aromatic squash grown on Peru's north coast whose scent is a signature of Lambayeque cooking.

Young goat is braised in a cilantro and chicha de jora sauce until tender, then served over stewed beans and rice. Chiclayo's market stalls sell generous portions for lunch.

Why it's made this way: Goat herding is common in Lambayeque's dry coastal hills, making cabrito one of the region's signature proteins alongside duck.
