King Kong (Lambayeque Sandwich Cookie)

It's named after the 1933 movie monster, supposedly because a Lambayeque baker in the 1930s wanted a treat as "gigantic" as the newly famous ape.

Layers of crumbly shortbread are stacked with manjar blanco, pineapple jam and sometimes peanut paste, then wrapped whole. Bakeries and street sellers around Lambayeque cut it into thick slices to sell by weight.

Why it's made this way: King Kong was invented and remains produced almost exclusively in Lambayeque, where it's treated as a point of regional pride.
