The fish is wrapped and grilled in the same bijao leaf used for juane, making the leaf the Amazon's all-purpose natural cooking wrapper.

A whole river fish, often paiche or doncella, is seasoned with onion, tomato and culantro, wrapped in bijao leaf, and grilled directly over open coals. River-port vendors in Iquitos prepare it fresh to order.

Why it's made this way: The dish relies on Amazonian river fish species and the bijao leaf, both specific to Loreto's jungle and river ecosystem.
