The grub is prized for tasting like rich, buttery bacon when roasted, and a single infested palm trunk can yield dozens of them at once.
Fat, white palm weevil larvae are skewered and grilled over coals until the skin crisps, or eaten raw in some communities. Iquitos market vendors sell them as a snack, sometimes still moving before cooking.
Why it's made this way: Suri develops in the trunks of palms found throughout Loreto's rainforest, making it a food unique to the Peruvian Amazon.
