It's sweetened with chancaca, raw unrefined cane sugar, and traditionally made with goat's milk rather than cow's milk.

Goat's milk is slow-cooked with chancaca and cinnamon for hours until it thickens into a spreadable caramel-like fudge. Street vendors sell it wrapped in banana leaf or scooped into small cups.

Why it's made this way: Piura's dry region raises goats rather than dairy cattle, and its sugar-cane valleys supply the chancaca that defines this dessert's flavor.
