The soup gets its distinct flavor from chuño — potatoes freeze-dried using a centuries-old technique of alternating nighttime frost and daytime sun exposure at Titicaca's altitude.

A thick soup of lamb or beef, chuño, wheat berries, vegetables and herbs is simmered for hours. Market stalls in Puno ladle it into bowls for a filling breakfast or lunch.

Why it's made this way: Chuño-making is only possible at Puno's extreme high altitude, tying the soup directly to the Altiplano's climate and Aymara/Quechua food traditions.
