It is often described as Kraków's answer to the American French dip, though the two sandwiches developed quite independently.
Slices of slow-roasted pork shoulder are stuffed into a soft bread roll and dunked into the rich, dark gravy left behind in the roasting pan — sold at food trucks and Kraków bar mleczny counters as a hearty, drippy handheld lunch.
Why it's made this way: It's an old Kraków working-class dish, a cheap way to turn a pan of roast pork and its juices into a filling lunch, and it has been revived by the city's food trucks and bistros.
