It's essentially a French dip sandwich that Kraków arrived at on its own, long before the American version had any presence there.
Slices of slow-roasted pork shoulder are stuffed into a soft bread roll and dunked into the rich, dark gravy left behind in the roasting pan — sold at food trucks and Kraków bar mleczny counters as a hearty, drippy handheld lunch.
Why it's made this way: It's a working-class classic tied to Kraków's Nowa Huta steelworks district, where cheap, filling roast-pork lunches fed shift workers through the communist era and stuck around as comfort food.
