Locals argue fiercely over whether it's properly eaten grilled, boiled, or fried — and most Silesian markets sell it prepared all three ways side by side.

Silesia's own take on blood sausage, packed with barley groats, pork, and liver, grilled whole over coals at outdoor markets until the casing blisters, then served with rye bread, mustard, and sauerkraut.

Why it's made this way: It's a regional variant of the pan-European farmhouse blood sausage, shaped by Silesia's German-Polish culinary crossover and the same waste-nothing butchering tradition as its Bohemian and Bavarian cousins just across the border.
