It's often called 'Frango da Guia' nationwide, after a small village near Albufeira whose roadside grill houses turned it into a destination dish.

A whole chicken is butterflied, marinated and basted with a fiery piri-piri chili sauce, then char-grilled over open coals until the skin blisters. Sold at roadside grills and market stands across the Algarve, especially around the town of Guia.

Why it's made this way: Portuguese settlers returning from Angola and Mozambique in the 1960s and after 1974 brought African bird's-eye chili and grilling techniques with them, and the Algarve town of Guia became the dish's unofficial capital, with a restaurant there claiming to have served it since 1964.
