The dish is served cold specifically to cut through the richness of an entire roasted pig — a built-in palate cleanser invented by lechonera cooks, not a chef.

Boiled green bananas are sliced and marinated in olive oil, vinegar, garlic, onions, and peppercorns, then served chilled as a tangy counterpoint to fatty roast pork. It's set out in big bowls at nearly every lechonera along the Guavate route.

Why it's made this way: The escabeche pickling technique arrived with Spanish colonization, but pairing it with green bananas instead of vegetables adapted it to what grew locally around Cayey's mountain farms.
