Along Guavate's PR-184 "Pork Highway," whole pigs turn on wood-fired spits for six to eight hours in full view of the road, and weekend traffic backs up as drivers pull over for a plate.

A whole pig is butterflied, seasoned, and roasted slowly on a wood-fired spit for hours until the meat pulls apart tender and the skin turns to shattering chicharrón. Lechoneras along the Cayey mountain route hack portions to order and pile them onto paper plates with rice and pork drippings.

Why it's made this way: Guavate's cluster of open-air lechoneras turned a countryside pig roast into the island's most famous food pilgrimage, drawing San Juan day-trippers up into the hills every weekend.
