The sausage is stuffed with rice, not just blood and fat, giving Puerto Rico's morcilla a firmer, almost pilaf-like bite compared to Spanish versions.

Pork blood is mixed with rice, spices, and sofrito, stuffed into casings, and grilled or boiled until firm, then sliced and served alongside lechón and chicharrón at Guavate's roadside lechoneras.

Why it's made this way: Morcilla making followed the same rural pig-butchering traditions that built the Ruta del Lechón, using every part of the animal in a single roadside meal.
