The drink relies on guanábana, a spiky green fruit whose flesh is too fragile to ship far, so kiosk stands blend it fresh rather than pour it from a bottle.

Guanábana (soursop) pulp is blended with milk or water, sugar, and ice into a thick, pale, fruity drink, poured cold into cups at the drink stands along Ponce's La Guancha boardwalk.

Why it's made this way: Fresh-blended fruit drinks like champola grew alongside the fritter and seafood kiosks of coastal boardwalks as a non-alcoholic counterpart to the rum drinks sold at the same stands.
