Carrucho is queen conch, a slow-growing sea snail now under fishing limits in parts of the Caribbean, making the cupful sold at a kiosk a genuinely regional catch rather than a shipped-in import.
Raw conch is pounded tender, diced, and marinated in lime juice, olive oil, vinegar, garlic, and sweet peppers, served cold in a cup alongside its cousin, octopus salad, at Ponce's La Guancha kiosks.
Why it's made this way: Coastal kiosk cooks along Puerto Rico's south shore built a whole category of chilled, cup-served ceviche-style salads around whatever shellfish local boats brought in that morning.
