Vendors serve it in a plastic cup with a plastic spoon, meant to be eaten standing up while walking the boardwalk rather than at a table.
Boiled octopus is diced and tossed with olive oil, vinegar, garlic, onions, peppers, and pimiento-stuffed olives, then chilled and scooped into cups. It's a fixture of the seafood kiosks lining La Guancha, Ponce's waterfront boardwalk.
Why it's made this way: Ponce's location on the island's southern coast made octopus and conch salads a natural specialty of La Guancha's kiosk row, distinct from the fried inland snacks sold further north.
