The name comes from "pir," the Russian word for feast — a humble hand pie named after a party.
Pirozhki are small, boat-shaped buns of yeast dough, either baked or deep-fried, wrapped around a filling like cabbage, potato, egg and onion, ground meat, or seasonal fruit. Long sold from small street windows and kiosks near metro stations and markets.
Why it's made this way: Pirozhki grew out of peasant baking traditions, where a little extra dough and leftover filling were folded into individual portions that stayed warm and portable for travel or field work.
