After hours of simmering, the wheat and meat are beaten with a wooden paddle until they fuse into one smooth mass — traditionally a communal, arm-aching task shared by a household ahead of a big Ramadan gathering.

Wheat grains and meat are simmered for hours in a big pot, then pounded together with a wooden paddle until they break down into one smooth, thick porridge, finished with a pool of melted ghee. Eastern Province households and Ramadan tents ladle it out as a filling iftar starter.

Why it's made this way: The dish spread along Gulf and Indian Ocean trade routes — related versions exist in Iran and India as haleem — and it stuck as a communal Ramadan-cooking tradition in the Eastern Province's port cities, which had the deepest historic trade ties across the Gulf.
