Khameer

Unlike the thin, unleavened flatbreads baked further inland, khameer is deliberately left to rise and lightly sweetened — its name simply means "leavened."

A lightly sweetened, yeasted dough is baked into small, dense rounds with a soft, slightly springy crumb. Bakeries across Dammam, Khobar, and Qatif sell it warm each morning, torn open and dipped in cheese, honey, or eaten alongside a hot glass of tea.

Why it's made this way: The Eastern Province's close trade and family ties across the causeway to Bahrain and the wider Gulf shaped a shared breakfast-bread culture that looks distinctly different from the flatbreads of the Saudi interior.
