Foul medames is one of the oldest continuously eaten dishes in the region, but Hejaz gave it its own sidekick — tamees, a thick flatbread baked to order in a clay oven, made specifically to scoop it.

Slow-simmered fava beans are mashed with garlic, lemon, and olive oil, then scooped up with tamees — a thick, slightly charred flatbread baked in a clay tandoor-style oven. Breakfast carts and hole-in-the-wall counters across Jeddah and Medina sell the pair together every morning.

Why it's made this way: Centuries of Egyptian pilgrim and trade traffic through the Hejaz's ports carried foul medames into the region's breakfast culture, and local bakers paired it with their own tamees loaf rather than the flatbreads used elsewhere in the Arab world.
