Domoda

It's essentially the same dish as mafé under a different name — the Mandinka word for it simply means 'sauce.'

Meat or fish simmers slowly in a thick, ground-peanut sauce with tomato, onion and whatever vegetables are on hand, then gets ladled over rice. It's a staple of the Casamance-Gambia borderlands, where Mandinka communities on both sides of the river share the recipe.

Why it's made this way: The dish reflects the cross-border Mandinka culture of the Casamance-Gambia frontier, where the same groundnut stew carries a different name depending on which side of the river you're standing.
