Baobab is one of the only fruits known to dry out naturally while still hanging on the tree, which is exactly why its powdery pulp keeps for months without refrigeration.

Dried baobab pulp is soaked in water, mashed and strained through a sieve to remove the fibers and seeds, then sweetened into a tart, pale pink juice. Dakar street vendors sell it ice-cold from coolers and jugs alongside bissap and ginger juice.

Why it's made this way: Baobab fruit dries naturally into a shelf-stable powder, letting vendors across Dakar keep it on hand year-round even without refrigeration, unlike more perishable fresh juices.
