Bassi Salté

It's studded with raisins and dates alongside meatballs and vegetables, giving a savory couscous an unexpected sweetness.

Steamed millet couscous is piled with a simmered sauce of small meatballs (diaguas), chickpeas, white beans, potatoes, carrots, cabbage, raisins and dates. It's a specialty of the Sine-Saloum region, especially around Fatick, traditionally cooked in large batches for the Tamkharit new year feast.

Why it's made this way: The dish is closely tied to the Sine-Saloum region and to Tamkharit, the Muslim new year, when families cook it in bulk to share with neighbors regardless of means.
