Ditakh

Its pulp packs roughly six times the vitamin C of an orange, gram for gram.

The green pulp of the ditakh fruit, gathered wild from Detarium senegalense trees on the Sine-Saloum islands, is mashed and strained into a sharp, faintly sour juice, usually sweetened. Vendors sell it chilled from coolers alongside bissap and bouye.

Why it's made this way: The ditakh tree grows wild specifically along the forested islands of the Sine-Saloum delta and in Casamance, making the juice a genuinely regional specialty rather than a nationwide staple.
