Ditakh is a legume: the green, fibrous pulp wraps around a single hard seed inside a round fruit on a tree from the pea family.
The green pulp of the ditakh fruit, gathered wild from Detarium senegalense trees on the Sine-Saloum islands, is mashed and strained into a sharp, faintly sour juice, usually sweetened. Vendors sell it chilled from coolers alongside bissap and bouye.
