Its three traditional rounds are brewed to taste different on purpose — bitter, then sweet, then sweetest — said to mirror the stages of a person's life.

Chinese gunpowder green tea is boiled with mint and sugar over hot charcoal, then poured back and forth between small glasses from a height to build a thick foam. The ritual repeats across three rounds and can stretch over hours, a fixture of the hospitality culture Touba's religious brotherhoods are known for.

Why it's made this way: In Touba's Mouride and Baye Fall communities, brewing attaya for guests is treated as an act of hospitality and patience, making the slow tea ceremony as much a social institution as a drink.
