Bakeries around Novi Pazar's bazaar sell baklava by the tray all day long, not just for holidays — here it works more like an everyday street pastry than a special-occasion dessert.

Dozens of paper-thin phyllo layers are brushed with butter, filled with chopped walnuts, and soaked in sugar or honey syrup after baking. It's cut into diamonds and sold from bakery counters and market stalls in Novi Pazar's old town.

Why it's made this way: Sandžak's centuries under Ottoman administration left it with the syrup-soaked, nut-filled pastry tradition shared across the former Ottoman Balkans, still strongest here in Serbia.
