The Boran cattle bred specifically in Baidoa district are among the few indigenous cattle ecotypes still raised for both milk and meat in southern Somalia.

Maraq fahfah simmers cubed lamb with potatoes, carrots, and cabbage in a broth perfumed with coriander and garlic — a comforting stew built for a region that raises livestock alongside its crops.

Why it's made this way: Baidoa and the surrounding Bay region are agropastoral, farming sorghum and beans while also herding cattle, sheep and goats, and fahfah's mix of stewed meat and vegetables reflects that dual economy on one plate.
