Pairing a plain, unsweetened banana with a savory rice-and-meat dish is such a fixture of Somali dining that many families consider the meal incomplete without it.

Bariis iskukaris is basmati rice cooked together with meat — often camel — raisins, peas, and fried potatoes in a single pot, so rice and stew tenderize together. In Jubaland it's served, as almost everywhere in Somalia, with a fresh banana on the side.

Why it's made this way: Jubaland's fertile Jubba river valley has long supplied the bananas Somalis pair with nearly every meal, and Kismayo, as the region's capital, sits at the center of that banana-growing tradition.
