Vendors sell bajiya in twisted newspaper cones that turn translucent as hot frying oil soaks through the paper.
Bajiya are small, deep-fried bean fritters, crisp outside and soft within, scooped straight from the fryer and handed over in paper cones. They're a fixture of Mogadishu's Bakara Market from late afternoon onward.
Why it's made this way: Bajiya belongs to a wider Indian Ocean trading world of fried lentil and bean snacks, a savory echo of centuries of contact between the Somali coast, the Arabian Peninsula, and South Asia.
