A 1988 readership survey by the newspaper Xiddigta Oktoober found 83% of Mogadishu residents named cambuulo their preferred evening meal.
Cambuulo is slow-cooked azuki or kidney beans mashed together with generous spoonfuls of ghee and sugar until rich and slightly sweet. It's ladled hot from roadside pots in the evening, scooped into bowls or eaten alongside bread.
Why it's made this way: That 1988 survey figure is still cited as proof of how central this simple bean dish is to Mogadishu's daily table, outranking meat and rice as the city's go-to dinner.
