The market alley where it's famous grew out of goods traded by Korean War refugees — a food street born from a wartime black market.

Slippery sweet-potato glass noodles are tossed with a sweet-spicy gochujang sauce, pickled radish, and fish cake, then handed over on a small plate to eat perched on a low stool right at the stall. Busan's Gukje Market Food Street has served it this way for decades.

Why it's made this way: Gukje Market itself formed after the Korean War as refugees set up stalls to trade U.S. military surplus and imported goods, and its food alley grew alongside it into one of Busan's most iconic street-eating traditions.
