The lotus leaf isn't just a wrapper for looks — its natural antibacterial compounds were the whole point, a low-tech way for Buddhist monks to keep rice from spoiling through Korea's humid summers, centuries before refrigeration.

Glutinous rice studded with chestnuts, jujubes, pine nuts, and gingko is packed inside a whole lotus leaf and steamed until the leaf's grassy, faintly sweet aroma seeps through the grains. Restaurants and market stalls around Buyeo's Gungnamji Pond, one of Korea's oldest artificial lotus ponds, serve it as the county's signature dish.

Why it's made this way: Buyeo, the last capital of the ancient Baekje kingdom, has cultivated its lotus ponds for centuries, and the dish traces back to Buddhist temple food — monks wrapped rice in lotus leaves as a preservative-free packed lunch — before it became Buyeo's defining local specialty.
