Its name literally means 'roughly made noodles' — a nod to how quickly and simply the dough is rolled and cut compared to more delicate noodle traditions.

Rustic buckwheat noodles, cut thick and hand-rough, are tossed cold with a spicy-sweet gochujang dressing, julienned vegetables, and a boiled egg, or served in a chilled broth. Decades-old Chuncheon noodle shops serve it as the city's other defining dish alongside dakgalbi.

Why it's made this way: Gangwon's cold, mountainous terrain made buckwheat one of the few reliable crops, and Chuncheon families turned it into this simple, fast noodle dish — plainer and heartier than the more refined naengmyeon traditions further north.
