It's blood sausage's stand-in cousin — the squid's own body replaces the traditional pig-intestine casing, filled with a mix that itself evolved from simple leftover rice and dried radish leaves before the war.

A whole squid is gutted, stuffed with seasoned glass noodles, vegetables, and minced meat, then steamed and sliced into rounds like sundae blood sausage. Sokcho's Abai Village, built by displaced Korean War refugees, has served it as its signature dish for decades.

Why it's made this way: Refugees from Hamgyong Province who settled in Sokcho's Abai Village during and after the Korean War couldn't easily get pig casings for traditional sundae, so they used squid hauled in daily from the East Sea instead, inventing a dish now unique to this stretch of Gangwon coast.
