The style spread nationwide largely because of migrants from Korea's north settling in port cities like Incheon after liberation — the recipe carries their home region's food culture as much as it does Incheon's own.

Bite-sized fried chicken pieces are tossed in a sticky, sweet-and-spicy soy-garlic glaze until every piece is lacquered and glossy, scooped into paper cups to eat while walking through the market. It's one of the most famous items at Incheon's century-old Sinpo International Market, with vendors selling it by the kilo.

Why it's made this way: As industrialization expanded Korea's poultry and cooking-oil industries after the 1960s, migrants from Hamgyeong who settled in port cities like Incheon are said to have helped popularize this sweet fried chicken style, and Sinpo Market became its best-known home.
